So I'm at work today thinking about BEER.. and I was thinking what if you made a big beer and just added a bunch-variety of hops every 5 minutes of the boil, how about a pound or how about the same but just centennial or cascade a beer that when I thought of it I was thinking of those sour lemon candies..


I need some vacation time.

go to lunch, have a DFH90, and a Two Hearted Ale, decide which you'd like to brew, and then take the rest of the afternoon off...

You would be really, really hard pressed to use a pound of hops in a five gallon boil. The best I have achieved is 10 oz of whole & pellet hops ina boil....13 ounces total after dry hopping and mash hopping.

i have used 16oz or so on my last beer. doing a 3 or so gallon boil and pellet hops in a hop bag for efficiency.
with 5lbs of ultra light lme and 2 lbs of corn syrup people said they couldnt taste the malt. these were high alpha hops too. it didn't last long enough to age, except for one bottle.

So you used a pound of hops (columbus IIRC) to basically 7 pounds of extract?

Ouch. That must have hurt.

What was your O.G.?

I am not suprised people said they could not taste that malt....ultra light extract and corn syruo would not lend much of any flavor....except for a cidery hit due to the overall percantage of corn syrup that you used compared with the ultra light extract.

What other comments did you get about this is beer?

in the malt's defense i had 1lb of crystal 40 and 1lb of caramunich as steeped grains.
half of the hops came from an 8oz bag of cascade i just kept putting in whenever i felt like it. there was nugget, target,kent goldings for aroma and yes, a few oz of columbus.

everyone agreed it smelled great. the taste, well it tasted like hops. there was no infection or tanins or anything but i think we all agreed it was "unbalanced" in a word. i drank most of it myself really young before the hops had a chance to fade. it was good about leaving lingering hop taste in your mouth and throat. i thought it was good, but i dont think too many people i shared it with really liked it.

To be honest, that type of unbalanced beer, you'd need to let sit for more than a year to fade the hops....

The beer I that I used 13 ounces of hops had an O.G. in the 1.095 range.

was that high enough to give it a strong malt backbone? also were they high alpha hops? i have not tried dry hopping yet.
i will order more malt as my next order, but i still want to make seriously hoppy brews. 1.095 or so isn't that scary i will just use a blowoff.

Yeah, it's good and malty. The hops were varied in their alpha strength, but nothing higher than say 12% aplha or so (not at home, don't have the recipe).

Dry hopping is easy to do, just add them to your secondy when you rack....I prefer to rack onto of the hops before rscking if they are leaf, because they float....you can soak'em good. If they are pellet, add the hops after you rack to secondary, because they will dissolve and sink.

As far as your recipe goes, use a recipe calculator so you will know how much you need to use. If you want to achieve that high of a gravity, make sure you either add the malt late or use as much grain as possible by mini mashing.....that much extract in a concentrated boil will SERIUSLY decrease your hop utilization, and slap you with a nasty extract twang.

A blow off tube for that high of a gravity is in order, and you will want to consider repitching the yeast cake to make sure you start with high cell count.

Last, let us help you with your recipe so you don't get crazy with the hops, you can ruin a batch fast by over using hops. It may taste greeat to you, b/c you made it.....but everyone else---hopheads included--may feel like they have been slapped in the face.

thanks for all of the tips. i will run my recipe by you guys before i brew next time. i've got something with more malt and less hops pitched onto the hoppy beer's yeast cake that i need to bottle soon.
i have no idea what's next i may even get a kit.

I was going back through old posts and came across this one.

I must confess, I made an IIPA with 16 oz of hops, between mash, boil and dry hop. It has turned out very well, but all the hopping in the bil started a 25 minutes...and all leaf hops too...ugh what a mess

Oh well, OG was 1.082, and tastes fantastic.....
