any thoughts on belgian beers that pair well with belgian chocolate? the chocolate will range from milk to very dark.

i'm curious about other (non-belgian) chocolate-friendly beers too.

first off - welcome.

I've heard stouts to do very well with chocolates

Dairy products (including milk chocolate) are not often recommeded for brewing. I can't recall why right offhand, and I haven't tempted fate by putting any in a batch, soI can't tell you from experience, either. The most common way of adding chocolate to a batch is by using cocoa powder or unsweetened baker's chocolate. I have described the method I use at least twice on this forum, use the search function and you should be able to find plenty of help on adding chocolate. The biggest concern is that you don't scorch the chocolate on the bottom of the brewing kettle.

mill rat, I think he's just talking of eating the chocolate while drinking a commercially-made beer.
