My wife loves a local belgium wit (swallow wit from Middle ages brewing company, Syracuse, ny) and wants me to give it a shot. I have a grain bill and hop schedule.
question:
When to add the corriander and bitter orange?
i've read at the start of the boil, with 15 minutes left, or at 5 inutes left, and even at flame out.

DOes anyone have the best answer out there???
4.5 # belg pale
4.5# wheat malt
saaz at 60 and 15 minutes. ibu 20ish.
corriander 1/3 oz.
orange 1/5 oz.
Any help would be greatly appreciated.

According to this (http://www.realbeer.com/jjpalmer/BrewingBelgian.txt) article:

"Use bitter orange at a rate of about 1/3 ounce for a 5 gallon batch, and boil the peels for about 20 minutes.

Find whole coriander seeds and grind them finely. Start with 1 ounce per 5 gallons. Boil it for five minutes, or add to the pot after you've turned off the heat."

I would use 1/2 oz of bitter orange peel, but that's just me.

real similiar to my recipe but I also used a bit of oats as well ...a whole ounce of bitter orange for about 15 minutes and an ounce of coriander for 5 minutes roughly crushed(in my coffee grinder lol) oh dont forget to get some rice hulls or similar.... wheat is bad for gummyness

rice hulls are for wimps. :D

I added my coriander and orange peel at 10 minutes... I'll be racking to kegs (direct from the primary) tomorrow...
