Colour and Bitterness issue. Is 56 EBC do light for a stout? Or should I think about putting my beer in another category? It looks black, but maybe not black enough. I think I'm also low on IBU's. Only got 23 according to BeerSmith. He's my recipe and such.

3.75 Kg of Pale Malt
380 grams of Crystal (120 EBC)
234 grams of Cara Malt
16 grams of Cafe Malt
260 grams of Chocolate Malt
100 grams of Black Patent Malt
2 grams Salt

Mashed 75 minutes at 65 C

+00 - 24 grams Challenger (7.4%)
+45 - 12 grams Styrian Goldings (4.1%)
+45 - Irish Moss - 1 Tablet
+55 - 7 grams East Kent Goldings (5.4%)

After chilling had 20 liters at 1.050 and diluted with 3 liters of water for new O.G. of 1.043 and total volumn of 23 liters.

Used WYeast 1084 Irish Ale

My intention of the make a stout, though I think I'm alittle off the mark. Beer smith says I'm too light, but I haven't made grain correction with the 16 grams of Cafe Malt (was supposed to be 260 grams of Cara, but ran out and improvised)

My object was a smooth malty stout, not dominated by the hops, but not missing them either. But I think the dilution may have watered down the bitterness a bit.

Anyhow, any opinions?

You need some Roasted Barley to make it a Stout.

You guys look to be correct. I'll have to get some roasted Barley (or roast my own). I guess I'll have to rename this one a Brown Porter then. Not that that's a bad thing. At least it fits in a style. But better to hit what you're aiming for, no? I'll try again after Easter. Hopefully this one will turn out to be a nice Brown Porter.

Crap, now I gotta find unmalted barley. My HBS in Barca doesn't seem to have any. It can't just be roasted malted barley, or is that some kind of no no?

roasted malted barley is chocolate malt or black patent. roasted barley imparts a whole different taste than malted grain
