I found a recipe for a tripel that incorporates chamomile.

After buying some, I noticed that the recipe calls for 43 grams.

My entire box of chamomile only equates to about 20 grams.

I wonder if anyone has any experience with brewing with chamomile. I'm not sure what type of flavor to expect, so I was considering just going with the 20 grams to be safe. It still seems like a lot to me. I don't want to take away from the other flavors in the beer!

which yeast are you using? I have found that by using Saaz as aroma and dryhop, and White labs 570 or wyeast 1388 and let it rest in the secondary 3 weeks you don't need to spice it at all. But if you do want to spice anyway, I would recommend 1/2-1 ounce (14g-28g). That is what I put in my 5 gallons of Wit, I think anymore than that you will have an overpowering chamomile trippel.

Thanks for the response. I'm using the WL570. I think I'll go with the 14g to make the taste more subtle.
