Could I fill a clean bottle from kegged beer, cap it and store it?

Yes, but it will likely foam all over the place.
These things keep the beer in the target bottles.

attach a tube to the tap that will reach the bottom of the bottle. fill and allow some foam to overflow. cap immediately.
the co2 in the foam should push air out of the bottle and keep staling o2 out, however, there was o2 in the bottle before filling and some, no doubt, got into the beer.
I don't know how long it will store like this, but I wouldn't go more than a week. If you want a long term storage, buy the beergun.

I think that it is no different than a micro filling a growler. One brewpub told me that an unopened growler will last up to five months! Not sure if I would wait that long though.

I've heard that you have to be built like a Hindu god to operate a CPBF, so go for the beer gun if you can.

The beer gun works very well. We just bottled a keg of Pliny the Elder about a month ago.

Last month I needed to fill one bottle and didn't feel like hooking up the beergun. I used the "hose on the tap" trick and it worked great.

I did the hose thing myself couple weeks ago, and it foamed. I finally got the bottle filled, sealed it, and next day was disappointed with the lack of bubblage in it.
Think I'll invest in a beer gun. The Boss absolutely loves the home brew and puts him in a good mood for days. LOL.

Nobody has outlined it, so here's the steps to minimize the mess with the tube method:
1) Put the bottles in the cooler with the keg. The beer and the bottles should be the same temperature.
2) Put a length of 3/8" tubing on your tap.
3) turn off the co2 and bleed off the keg pressure until the beer just flows.
4) This one goes fast, so pay attention. Place the tube into the cold bottle and fill it, removing the tube at the last second, letting the beer foam over as little as possible, and cap on the foam as quickly as you can.
I have given beers bottled like this to persons whose palate I trust and they tell me they could not detect any oxidation or spoilage after six weeks of refridgerated storage. I've personally had better luck (less mess) without the tube, just tilting the bottle, but this may expose more surface area of the beer to oxygen. But I don't usually expect the beer to last long enough for oxidation to become a problem. The tube tends to hold eight inches of beer until you set it down for a second then it lets it drain.
I'd like a Blichmann Beer gun, I just can't bring myself to spend $70 on a couple of pieces of tubing and rubber. I'm too cheap, I just can't do it.
