I have a recipe which calls for 1oz of Amarillo the last 2 minutes for aroma. My local supplier does not have. Would Cascade or Centennial give the same result and in what amount?

Cascade would be my first choice. It depends on what beer style you're brewing, but I could easily see 2 oz. Cascade for 1 minute (for aroma) for a hoppy pale ale or IPA.
Centennial is also good, but I'd only use 1 oz. / 1 minute. Another hop that you might consider is Galena, where I'd use 1 oz. / 1 minute. Have fun... :)
EDIT: Oh, and MoreBeer (http://www.morebeer.com/detail.php3?pid=Hama2) carries Amarillo, even if your LHBS doesn't...

this link to BYO (http://byo.com/referenceguide/hops/) lists hops types, AA%, brief descriptions, and possible substitutes. if you try to match up HBUs, then according to this site, maybe about 1.5oz of cascade, or just less than 1oz of centennial would be a good substitute. just pay attention to you desired HBUs.

I would suggest Vanguard if your local carries them. My local steered me to Amarillo as a substitute for Vanguard. So why not vise versa?

Thanks to all for the help. I'm relatively new to this but seemed to me that the character of the aroma of the substitute hop was of more concern then the relative HBU's...... or is that still a factor when deciding quantity / time of the substitute aroma hop.
