I just opened one of my batch of the Newcastle clone (the one I dropped a half-rack of when I bottled).

It's only been five days, so it's not completely carbonated, but it sure is going down easily. It's got a bit less bite and isn't quite as heavy as Newcastle (due to some recipe changes). It has sort of a "Newcastle Light" feel to it. It still tastes pretty yeasty, so I need to let it sit for a while longer, but I wouldn't turn it down if someone offered me one.

This beer will not last long! =)

Anyway, I just wanted to share my excitement and show you all that my pestering questions and your patient answers are paying off. Thanks everyone.

So you know that since this one tastes so good that you need to start another batch of something next weekend - 'cuz you don't want to be left with no beer.

Not a problem. I have an Amber ready to bottle, a pumpkin ale ready for secondary, and a cider ready for re-racking.

Of course, that's certainly not enough, so my next batch will be brewed next weekend! =)

That was my second batch - Newcastle clone from Austin Homebrew. It is amazing and very smooth. Great stuff.
