Ok my situation is this: To get a good variety of ingredients I need to drive an hour and a half. I want to make an I.P.A. with limited ingredients. I have gotten 5.5 pounds of light DME, 0.5 pounds of dark DME, half a pound of crystal malt and about 4 oz each of Hallertau, Cascade and Brewers Gold hops. I can get more light or dark DME, but I can not get any amber which is what all the recipes on cat's meow call for. (Prepositions are not for ending sentences with.) :D

I brew 5 imperial gallons (about 6 U.S. gallons) so I recognize that I have to get more extract, and I could use more crystal but I can't get it. So, does anyone have any pointers for formulating a recipe so I can show my friends what an IPA should taste and look like? (People up here in Canada think that Alexander Keith's IPA is representative of the style.) I'd like it to be in the 6-7% ABV range and good and hoppy.

Thanks in advance!

M.

I would suggest either brewing a smaller batch or getting more of the light DME. If you use the dark DME, your beer will be dark for a standard IPA. It does not take much dark malt to color the beer. If you don't use it you will be light for style.

Without knowing the alpha acid content of the hops I can't say that you have enough of too much. I would bet that yop should be ok. I would dry hop some of one of the varieties that you have.

Someone else might have better ideas. Good luck.

You might get something close using the below quick pass using your ingredients. It falls within the BJCP guidelines anyway. Also note that for the alcohol strength I changed it to a 4.5 gallon US batch. Maybe this can serve as a starting point.

You might want to check out www.paddockwood.com

They do mail order and are located in Saskatoon. Postage from Saskatoon to Brooks shouldn't be that bad. I just did an IPA from them and it turned out great!

Cheers

Thanks, so to make a 6 US gal batch it looks like about 8lb Light DME, 1lb Dark DME, the crystal malt during the pre-boil, 2.25 oz of the BG hops at 60 mins., 1 oz of cascade at 25 mins and dry hop about 1.75 of the Cascade and/or Hallertauer. Does that sound reasonable for a 4.5gal to 6 gal conversion?

Would it be wise to add the dark until the color suits my liking? (during the boil)

Thanks for the tip I'll give them a look and at least try them for one batch after I get this one done.

Here it is stepped up to 6 gallons keeping the proportions (ProMash is so useful) - Note I guessed at your AAU's and which Lovibond crystal you have. You can post or PM me the specifics if you'd like.
