How/when would a person add coffee beans to a brew if they so wished? How much to get a dark flavor?

you can add them whenever you want. Some add them to the mash, the boil, the primary, secondary or brew a pot and add at bottling.

However, you can get a coffee flavor from roasted barley or carafa malts.
