View Full Version : how much extract is too much

I've usually been doing double batches lately on partial mash to save time.
steep 5 lbs grain, then boil 12 lb extract, in my 5 gallon pot, then split to 2 carboys and dilute to 10 gallons total. It's been working great.

Now I wan't to do a double batch of imperial stout,
5lb grain and 24lbs extract.
Is that to much to ask for a 5 gallon pot. I'm thinking in terms of hop utilization and scortching the wort.
I'm also thinking about a late extract addition, or, boil a second pot, just for extract but only for 5 or 10 minutes, hops would be boilded in the first pot.

What are your thoughts on this please?

I do full boils for everything, so I'm biased that way. In your case I would be more inclined to go with a single 5 gallon batch and as much water as you can boil in your pot without spilling. Its not going to be a fast drinking beer anyway ...

in the mean time if your going to do 10 gallon batches, go down to the scrap metal yard and look for a keg you can convert.
You will notice the difference once you start just boiling the whole ten gallons.

I have been thinking my beer is a tad sweet, would that be due to double batch boiling in a 5 gallon pot?

Probably, you are carmelizing the wort, making the sugars unfermentable.

I'd agree - this can make for some great beer, just up your IBUs a bit and expect slightly lower ABV
