carb after 7 days

I have some friends coming over for the Super Bowl. I've got an IPA and an Oatmeal Stout on tap. I brewed up a Belgin Wit yesterday (Sat) hoping that next Sat. I could rack it from the primary and force carbonate it and serve it on Sun. Am I too optimistic? Will the beer be ok after 7 1/2 days?:o

To put it simply, no. Don't serve your buddies green beer.

Wit biers take a bit for the flavor to develop. My most recent one was pretty mediocre after 1 week primary, 2 weeks 2ndary, 1.5 weeks to carbonate, and a few days to cool so I could test my first bottle. A few more weeks after that and it was good.
