Hey all, I'm new to brewing, I've got my first batch in bottles right now. They've been sitting there for about 2 weeks and I'm ready to break one open and see how it came out. I brewed an American Pale Ale and the recipe says to let it sit for 2-3 weeks after bottling. I'm wondering if it's too soon to start opening them? Thursday will be 2 weeks and I was thinking of opening one then. My other question is whether or not i can put a few in the fridge tonight so they are cold on thursday? will that mess with the process?

Welcome to the site and to brewing. You should definitely taste one today, I've got to say you're more patient than most first time brewers are. And if it's carbonated to your taste, by all means throw a few in the fridge.

If the beer has a funny taste it is normal. Let them go another week and taste again. It seems like the best one is always the last one. That funny taste just means its still a bit green.

Thanks for the reply Corky, Yeah it's been tough to see them sitting there everyday but i didn't want to mess it up. I'll definitely crack one open tonight! Is it just a carbination issue or is the taste going to change too?
