Last March I brewed and bottled a strong scotch ale. About a month after bottling, I tried it and it did not have much carboniation at all. I waited another few weeks to no avail. Another month or two- still no bubbles. Now- as the year mark approaches, still no carbonation.

Here is the kicker- I have been able to wait this long because everytime I have tasted it before- it tasted a little off/green. However, I opened a bottle today and BAM- nice malty sweatness balanced with a great boozey warmness and very mild hoppiness- almost like a nice single malt--BUT STILL NO BUBBLES. Now is the time to drink it, but it is as flat as the day it came out of the secondary a freaking year ago.

I WANT BUBLES DAMN IT.

Anyone have any ideas on how to get bubbles without affecting the flavor too much?

Thanks~

get a packet of dry yeast that is similar to the strain you used. Carefully open each bottle, drop a small pinch of yeast in and recap.

I did this with a barleywine that would not carbonate. It worked out very well.

You want to make sure the yeast attenuation is similar. It should be low to medium. The alcohol tolerance should be high enough for your brew.

Thanks, I will try this and let you know how it works. Good thing I used e-z cap bottles.
