A month or so back, I brewed a Kolsch for my uncle for Christmas. Ive never had this style before, so I didnt have a comparison for it. My recipe was: 4 1/2 lb light DME, 1 lb wheat DME, 2 oz Tettnanger (boil), Irish moss for clearing,and Wyeast Kolsch yeast in the Activator pack. After both primary and secondary, I bottled last week. I took a bottle out for tasting today, and here are the results. Needs more conditioning, carbonation was a bit low. Golden in color with low hop bitterness. Surprisingly, no extract "twang". Lower in alcohol than my usual beers at 4 1/2 %. Kind of bland in contrast to the higher hopped American and English ales, even the Bocks and Dopplebocks I brew. I havent found a recipe or tasting reults on this site yet, and was wondering if anyone here has had this style. Overall I think it turned out pretty good, and if it is not true to style, it will be a good session beer

That looks about right for a traditional Kolsch. It's supposed to be delicate taste-wise, but it should also be cold conditioned and highly carbonated, so give it a bit more time.

I can't say I'm crazy about the style, but it offers something mildly interesting for those that are used to drinking light lagers, and can be mighty refreshing in the summer.
