Q. ~ Making Smaller Batches

I talked to the local homebrew store and inquired about doing 1-gallon batches. The clerk said they carried 3-gallon carboys but no ingredients for extracts for that small amount, only five-gallon batches.

Where can I find extract recipes for 1 or 3 gallon batches?

And can I use a 5-gallon carboy for a 3-gallon batch?

you can scale down 5 gallon recipes...

and yes, you can use a 5 gallon carboy for a 3 gallon batch...
