I just made a clone of 03.03.03 epic ale, read some notes about it a while ago that sounded interesting and ordered the kit from Austin Homebrew.

I made it today, and in reading the instructions, noticed that it said the beer would taste best after aging in the bottle for three years! I've been having a hard time waiting three weeks, I'll have to lock this one away.

Wondering how significant is the change in taste from 6 months to a year? 1.5 years to three? Anyone made one like this before?

I have a very heavy amber stashed away in my beer closet that I bottled in March. There is definitely a difference in the taste from month to month. It keeps getting better. I think you will be rewarded well for your patience with tihs and all of your home brews.

Out of curiosity what was the OG of this beer?

Mine turned out at 1.076. The kit said 1.078, so I was right in the ballpark. Fermenting away nicely, it smells great right now. It has seeds of paradise and coriander in it.

from what i understood, the seals on the bottles arent always 100% airtight and wouldnt even last that long.

anyone?

Try oxygen absorbing caps.

Yeah, that brings up another question I had. Everyone touts homebrew as being better because it is so much fresher than commercially distributed beer.

I suppose different beers are designed for different aging periods, but I have wondered about that as well. I'll invest in the oxygen absorbing caps, and probably taste one every few months to see how it develops.
