Hello all:
Just returned to hoembrewing this weekend after 4 years in the wastelands, and brewed up a pale ale. I'm worried (probably more than i should be, although i had to drink 2 beers during brewday to relax and not worry!!) about the room temp where i have my carboy (a closet). This morning, the airlock was bubbling away ( est. every 3-5 seconds or so) with an apparent room temp. of ~78F. IS this too high for the yeast (Wyeast Am Ale)? Could it possibly contribute off flavors? I should mention that i set the carboy in ~6 inch water bath and have been making use of the 'wet t-shirt' method, seen here several times (unfortunately, Papazian didn't include instructions on how to get some ladies into the wet t-shirts...). Could this be too cold for the yeasties?
It feels great to be back amongst the homebrewing faithful!

The shirt method should bring it down 5* or so, so you'll be fine. I've used that yeast at 74* without a problem.

If it's bubbling away then I doubt it's too cold. If it's 78F and you're using the t-shirt water deal, then it's probably not too hot. Relax - it's nearly impossible to make bad beer.

THanx guys. Just needed some reassurance. Checked her again today and she's still bubbling away like crazy. Can't wait to start my next batch...

Anyone care to elaborate on the wet t-shirt method, I've never heard of it? I don't have air conditioning and just haul the carboy to the basement in extreme heat, but am sure I've let my brew get warmer than 75 degrees once or twice.

You know you've had too much homebrew when: thinking that the chick in Papazian's book would look good in a wet t-shirt. :p
Professor Frink: The wet t-shirt method is where you place the carboy/fermenter in a container of water, and place a wet t-shirt over the carboy/fermenter. So, as the t-shirt dries out, it wicks up the moisture, and keeps the fermenting beer cooler than normal. Some might also suggest adding ice to the mix, to keep things REALLY cool...
