I just bottled my Peach Wheat Ale today. It smells WONDERFUL. I put 6 Liters in the Tap-a-draft and will set it aside to naturally carbinate for 2 weeks. I got 36 bottles out of the rest of it and it is a nice golden color. I can't wait to see how it came out. I got 76% attenuation which is higher than the usual 70% I get out of this yeast. I used a quart starter this time instead of a pint, so perhaps that gave the yeast a nice head start. Alchol should be 4.8% abv and it should have a nice light body.

I need to toss this crappy old fridge I bought at the beginning of the summer. It just sucks and doesn't cool enough and freezes over too much. I think I've got my $100 out of it. What I really need is a nice flat chest freezer that I can put a thermostat on. Then I can start investing in kegging supplies.

3# Light DME (Munton's)
4# Munton & Fison Wheat ale extract can
4 oz Victory malt
2 oz Crystal (10L) malt
2 oz Belgain Aromatic malt
1 oz Hallertaur hops (bittering)
Irish Moss

Added grains to 3 gallons warm water to steep. Brought to 155F and held 30 minutes. Removed from heat and strained wort from grains. Added DME and kit and brought ot boil. Begin 60 min boil and added hops. Add 1 tsp irish moss last 10 mins. Cool with ice bath and strain to fermenter. Top up to 5.25 gallons.

Pitch yeast starter at 68 F (2 M&F 7 gram yeast packs in 4 cups diluted wort)

Added two 10-oz containers of peach extract fruit flavoring when racking to secondary.

OG - 1.049
Ferment - 4 days at 72-74 F
Secondary -10 days at 74-76F
Bottled 6 Liters in tap-a-draft. Bottled remaining 3 1/2 gallons with 1/2 cup corn sugar
FG: 1.012
