Because it is a cheap all purpose sanitizer at one tenth the cost of Iodophor? As long as you don't leave the bleach in contact with the stainless steel for longer than the recommended contact time, its not a problem. The problem comes in when you leave them in contact for hours.

The problem with bleach is that even in small doses you can do serious damae to a beer. As a judge I have had more then my fair share of beers where the brewer has used bleach and it is readily picked out of the beer. It will come across with the profile of a chlorophenol and is nasty as hell.

Bleach should not be anywhere near brewing equipment for any reason IMHO but of course I am anti Iodophor as well for the same reasons.

Five Star makes a great product called Sani-Clean and another called Star-San and they are probably two of the best products on the market for sani purposes.

Sani-Clean continues to be a potent snai agent even after it is drained from the system and if you have the ability to cap off equipment it will still be good 3-4 days later. While they both can be expensive (upwards of $60 a gallon) they will last a homebrewer the better part of a year and change of dosed properly.

Damn, maybe I should start a homebrew supply from my house and get all the realbeer people discounts for this stuff!!!:D

When used in the proper amounts, nothing. A good majority of the people using it though go well above the suggested dose of 12.5 ppm and when you get past that you start to have phenol problems. Iodophor will show up in the final product as heavy phenolics like bandaid, clove and is nasty. Some people get it and think it is a lack of sani that is causing that problem so they up the dosage and make it worse.

There are plenty of chemicals tha can be used, and while they might cost a little more but it will last a hell of a lot longer and you will take about a year to burn through that gallon. Even when used well past the proper doasge (star-san is 1oz in 4 USG IIRC) it will not come through in the final product.

It's kind of like the slinky dress you see the larger women wearing, just because they make it in your size does not mean you should wear it!

Chemicals are the same, just because they are cheaper and work does not mean they have a place in the brew setting.

Of course this is all my opinion, if people prefer to use clorox or iodophor in the brewery, buy all means go for it.

For my last batch, in a pinch I had to use bleach for bottling. I rinsed like a bastard and it took forever to do. The beer turned out great, but it took me hours to bottle. All in all, it sucked big time. It was cheap and effective in a pinch. What about Oxy-clean? Anyone tried, or know of a reason not to use, Oxy-Clean? I love the stuff for everything else. I don't know if it would kill the nasties. It rinses easily too.

I believe that OXY-Clean is very similar to One-Step, which I have used without problem; haven't researched into it. Would it be substantially cheaper than One-Step?

It is substantially cheaper. You can get a half gallon of Oxy-clean for $6 at our local grocery store. I think it is even cheaper at Sam's Club.

My LHBS said to use Iodophor for stainless steel and one-step (which I was told can pit SS) for everything else.

regular price on those pots is $29.99! how can they sell SS so cheap???

I have only had one really problem batch SO FAR! I thought I that rinsing fifty times after using bleach was enough but I was wrong. Like Brewmonkey, if you don't get every bit out it creates a horrible taste. Kinda like a band-aid tea!!
