Hi,
I have fallen in love with Belhaven Scottish Ale recently. Does anyone know an extract recipe that comes close? Thanks!

I don't know the recipe, but AustinHomebrew.com has a clone kit (http://www.austinhomebrew.com/product_info.php?cPath=178_452_46_43_246&products_id=1581&osCsid=6e234e1ebc9a761564c7d65ba6c91016) - I haven't heard of a kit from them that didn't taste as advertised. After you buy it once, you'll know what's in it and can get your ingredients whereever you please.

As coincidence would have it, I have ordered the very same kit from Austin Homebrew--will let you know how close it approximates the real thing.

Jwuor, where are you located? I got some Belhaven recently and it tasted like it had been cooked in the bottles and then aged for 3 years. I was curious how it was supposed to taste. I get to travel a bit for work, so if I knew where it was taken care of ...

I'm in the Northeast. I get them in 16-oz cans with those pressure devices that float inside the can. The ale is incredibly smooth and creamy and, to my palate, there may be a hint of smokiness, so your reaction to the ale being cooked may not far that far removed.

I found another source locally. Its in a can this time and the Belhaven Scottish Ale is good.

if this beer has a nitrogen widget in the can, your clone won't taste the same unless you keg it and push it through a stout tap with a co2/n2 mix.

Yeah, I assumed that--is there no way to approximate that with bottled ale? anything to dd prior to bottling that can lend itself to that kind of flavor and, for lack of a better term, texture?

The nitrogen does create a creamy smoothness.

the best thing you can do is keep the carbonation low and pour VERY hard when serving.
