could someone please advise me as to why my batch tastes similiar to wine and leaves my mouth very dry?
not at all the refreshing effect I was seeking!

Well, let's start with more information, like recipe, O.G. & F.G., your process, etc, etc. Very hard to help you trouble shoot with out that info.

Thx sounds like it could be tannins. I'd bet you did an extract recipe with specialty grains, and either steeped them above 170º or steeped them in 5 gallons of water. tannins give an astringency like what you're describing. it could also be a hop astringency, which is somewhat like tannins but more subtle, it comes from being overly bitter or using high cohumulone hops like chinook or galena...

the other reason most people get tannins is they squeeze the steeped grains.
