View Full Version : brewing an extract/honey beer help needed

I am a beekeeper interested in brewing something with all the honey I have. Equipment on hand is a primary bucket, 5 gal. carboy, 3# light Laagland dry malt extract, 1oz goldings pellets, and dry ale yeast. I'm hoping to make something quick and drinkable with a nice honey taste and aroma. Anybody got a recipe they like?

Not sure how to tell you to get a honey taste, as nearly every bit of the honey you add will be converted to alcohol. You'll get a dry, light beer. Maybe you could make mead instead? Here's a quick lawnmower beer recipe I've brewed that you can drink within a month after brewing.
3 Lbs Light DME
1 Lb Honey
1 Oz Mt Hood Hops boiled 45 min
1 Tsp Irish Moss 20 Minutes
5 Oz Corn Sugar – Priming
Nottingham Dried Yeast
Dry hopped for 2 weeks with .75oz of fuggles.

thanks for the recipe, Hooky. A couple ?s: why is it called "lawnmower"? Are the hops wieght stated pelletized hops ? What is "dry hopping"?
From other recipes for beers containing honey I have seen advice to retain some of the honey's aroma in the brew by pasteurizing the honey carefully @ 170F and adding it after the boil. Also avoiding finishing hops that would mask the bouquet.

I made a dark braggot this weekend that I hope will be good, but the OG was much higher than I anticipated. It was not a very well thought out recipe, I just wanted to get it done quickly.
8 lbs 2 row(might have been 10) and 3/4 pounds roasted barley mashed at 152 for 60 minutes
2 oz Centennial hops, 9.1AA, 60 mins
I let it sit 15 minutes after the boil and added 6 lbs honey, pumped through CFC onto champagne yeast cake from mead. OG 1.090
This was my first shot at a braggot, and I had had a few Guiness at my boss's house that evening so it'll be interesting if not good.

it's called a Lawnmower because it's a relatively light, low alcohol beer that is a thirst quencher for after you mow the yard. It seems like every Home brew Supply shop has a lawnmower recipe. I just tweaked the one my local joint had.
The hops were pellets, not whole. Dry hopping in this case was me sterilizing a muslin grain bag, putting the hop pellets in it and stuffing it into the secondary. I like the idea of a honey taste and aroma. I'm interested to see what kind of feedback you get on this one.
