I brewed another batch of scotch Ale this past sunday (it seems to be the most popular around here) And I put a sample in my hydrometer tube to take the OG, well after I took the reading I left it in the kitchen and had forgotten about it. Tonight I noticed it and saw that it had a head of foam on it, looking closer, it seems to be fermenting, It must have picked up some yeast from the near by open window?.
So I covered it with foil (make shift air lock) and am curious how it will turn out.
it will probably taste terrible but it is a neat
experiment, who knows maybe it will turn out somewhat ok.

i read something about using wild yeast that basically said to do just what you did croc- basically, make a starter and let it sit out until it ferments. if it tastes like sh!te, toss it out and try again. eventually, you (hopefully) stumble upon a wild yeast strain that'll make good beer!

I tried the concoction and I am still alive ;-), although I have this twitch in my right eye.............. LOL


It actually wasn't bad, but the beer did not have any of the character it should have had (scotch ale). It was very bland, nothing like other beers I have tried comming from primary.

So I just dumped the yeast, I brewed a wheat this weeked, and once again left the tube full with my hydo sample. I am wondering if I will see any activity.

There are thousands of yeasts some of which will give most unsavoury results.

I use wild yeast only when fermenting fruit (like grapes) on which it naturally occurs.

For beers I reckon it's safer to buy a yeast with known characteristics.

I am doing this really only as a gee-wiz thing, I don't really plan on using the yeast for any real purpose

I could be a little gross with this talk of wild yeast but for now I will choose not to do so.
