View Full Version : What to make of my B3 Tripel?

Tried my B3 extract tripel today. The tripel is an extract kit from morebeer.com

I put this baby in the primary for 2 weeks (crazy fermentation, almost blew the bucket until I put in a blow-off), then aged in secondary for 1 month. Kegged it (first time I ever kegged), and force carbonated at 15psi for 2 days in the fridge. Got it out yesterday and shut off the c02. Drew a half glass today, very cloudy (first glass from a keg is cloudy I'm told), and tried it warm (not the best temp). Had a very bready/yeasty aroma, and had a monstrous head on it. Taste was flattish/alcoholic/bitter (not hop bitter). I'm guessing this baby is going to need some serious aging time (probably about 6 months in the keg at least).

Give it another few day to stabilize under the CO2. That may take care ofthe flattish character and some of the foaming issues. Since this is your first kegging, you may also likely need to balance your pressures and restrictions, too. Micromatic has a fairly straightforward description of how to do this on their web site. Yes, further aging will be required, but at least you're not trying to naturally carb a beer this heavy.

Thanks for the info. I do like force carbonation for this. I figure, why go through all the trouble of trying to natural carbonate these huge beers when you can just force carbonate them and be certain they will carbonate.

Generally I let my tripels age at least 6 months before drinking.
It's well worth it.

It sounds like the 6 months is practically manditory. It was just way too harsh at this point to drink. I am starting today on my christmas ale (6%) which I will bulk age until December. Sounds like the Tripel will be ready for St. Patty's day!
