View Full Version : Steeping time for Alt beer recipe

Hi everyone, I am going to be brewing a dusseldorf alt beer
for octoberfest and had some questions on the recipe.
I am going to be steeping caravienne malt,belgian munich
malt,and some chocolate malt,and the instructions for the
steeping time was a 1hr steep at ~150 deg. Does this seem
too long? I have never brewed this style beer before so it
could be right. The rest of the recipe is as follows.
6 lbs light dme,hallertauer for bittering and finishing,and
the limited dusseldorf alt yeast.
Please feel free to leave opinions!!

If you have the time go with it. Otherwise put your grains in the 'sock' and dip it into the pot of water on the stove as you start to heat the water. Therefore you will take the grains through a full range of temperature changes.

30 minutes should be plenty of time for steeping, but 60 won't hurt it either. Don't steep grains any higher than 170F, try to keep it around 150F.

However, you are really doing more of a mini-mash by using the munich malt, in which case 60 minutes is far more appropriate.

Out of curiousity, what are the amounts of chocolate malt and finishing hops?

I don't have the recipe in front of me,but I believe it is:
-6lbs light dme
-1lb caravienne malt
-1lb belgian munich malt
-1/4 lb chocolate malt
-1.6oz bittering hops
-1.0oz finishing

This is an approximation,but I will correct the recipe on monday
if anything is wrong.

The chocolate malt will make it very dark, an Alt should be copper. If it was me, I wouldn't even use it.

Finishing hops are also not expected in a traditional Alt, but can be used.

How many gallons are you going to be boiling? Do you know the AA% of your hops?
