So, my brew partner and I had a very... educational... experience today. Picked up a porter kit last night, never got around to brewing, though we smacked the smack pack of yeast and crushed the grains. Other plans interrupted the brew session.

So today was the first day of football camp for us, and we only had 2 hours to brew.

Quickly found out that you can't do it in 2 hours. We ended up shortening the boil to 45 mins, then covering it to prevent nasties fromg getting in, then putting it on ice and rushing off to a team meeting. Come back after practice and find that it is 115 degrees FIVE hours after we ended the boil. Then to top it off, spilled some tap water in the wort.

Think it will turn out ok? I'm interested to see how it is... we pretty much did everything wrong we could have, save for spitting in it.

I know of a brewer that put his wort out in a snow bank, pot covered, one cold night, He fell asleep and the wort froze. he simply thawed wort at room temp and then pitched yeast. It came out fine.

As long as pot was covered, you will most likely have no problems.

I'm not sure at what temp DMS becomes a non-factor, but that would be my only concern. Did you compensate in volume of hops for the shorter boil time? If not you beer will be less bitter than you might expect.

See thats the thing, we had already started the boil and added the bittering hops (1 oz chinook) before we realized we weren't going to have enough time. So it won't be as bitter as it was going to be, but i think that'll be ok.
