View Full Version : When to add more coriander?
Hi Guys,
Question: When and where can I add up to an extra oz. of coriander to my beer kit? Saw someone mention they put it in the secondary? I would like an intense Blue Moon aroma.
Other: I really enjoy the smell of Blue Moon so I bought an extra once of coriander for my kit. Kit says to add 1oz 10 minutes before end and where and when should the other once go to achieve the best aroma.

You can always add more at knockout, but I seem to concur with your memory of others saying they have added it to secondary with good results.

I have in the past used this method with much luck.
If you are not sure of how much you should use, shoot for the low side. If you are not pleased with it at packaging time, you can make a quick "tea" from it and add it slowly until the desired taste/aroma is achieved.
We had a wit that had a bunch of corriander in it during the boil, none of it showed post fermentation. We ended up making a "tea bag" of some crushed corriander and added it to a small volume of near boiling water. let it step for 20-30 minutes and then add.
I think it would be good to make a coriander tea using a quart of near boiling water and the coriander, then adding that to secondary.

Kool, thanks! I was concerned about contaimination, adding it to the secondary. But the boil will control that.
Do I have to worry about that pint of boiling temp. water killing my yeast when I add it? It'll kill some but not be detrimental, correct?

Yeah, it'll kill a few but not many.
I'd just bring the water to a boil, and throw in the crushed coriander in a fine grain bag. Take it off the heat, and let it sit and cool down for 20 mins (covered).
Then, add it to the secondary.

Have you made this kit before, without adding extra corriander?
1 oz is already agressive... and Blue Moon is a fairly tame wit, so if that is what you are shooting for, I wouldn't add more. However, the corriander tea idea is a good way to make sure you don't overdo it.
first time with this kit. Also, I think I'll just add .5oz in the tea.
