According to Kegman I should pressurize at 33lb at 68f. Is this initial and then back it down to 12lb after a couple of days???

Kinda but not really.
33psi at 68F will put roughly 2.5 atmospheres of CO2 into solution. This is right in the middle of the 'normal' levels.
You'll want to find a temp/pressure combo that yields 2.5 atmospheres down in the serving range. Use this chart (http://www.northernbrewer.com/instructions/co2.htm) to pick based on your target temp.
Then, what you want to do is disconnect the co2, chill the keg down to serving temps, THEN reconnect at the appropriate lower pressure. It'll help ensure that you don't over/underpressurize the beer when it hits serving temps.

How soon to I need to get my keg in the fridge? I saw a site that said my keg (5gal) will spoil in a day or 2 at room temp. That doesn't sound right.

do bottles spoil in a day or two? NO! A keg is just a big stainless bottle

I have the reg. set at 30 psi. I add co2, disconnect the gas then let it sit. Come back later, mabey a couple of hours, and add more gas. How many times do I have to do this before It will stop accepting gas? I have it set to 30 psi at room temp and put in small amounts of gas til it won't take anymore. Then I'll take it to the office and put it in an extra fridge. I don't want to keep the co2 hooked up to it for liability reasons until I am ready to party with it.

Just keep gassing it up. It won't hurt to have fluctuations as the CO2 is absorbed. You'll want to keep your keg at the low seventies, regardless. When you put it in the office fridge, you'll have to adjust the psi. Carbonation is affected by temperature.

That would only happen if you were using air and not CO2.
