Has anyone ever used Brewferm Blanche Yeast (http://www.hopshopuk.com/cgi-bin/browse-no-frames.cgi?view=item&item=yea005b&session=68474263)?
I am going to cook up a Wit Beer this week and will be using this yeast to ferment it.
After the end of the primary fermentation, I am in the habit of throwing another beer onto the yeast cake and was considering a Grand Cru, but I am unsure of the alcohol tolerance of this yeast. Anyone got any idea? I have had a quick google but can't find any real details for the yeast.
Not that it matters all that much. I always keep a sachet of dried champaign yeast handy, in case one of my big beers it stops short of where I want it.
