Hi Daznz,
I have used coriander and orange peel in a couple of brews and intend using them, along with orange blossom, in the brew I have planned for next week.
The first beer I did with coriander and orange peel took a bit of getting used to, as the coriander was very strong and up front. The second one was much more subtle. I'll be trying for something in between with this next one.
Unfortunately I don't have my brew book with me (pretending to work at the moment), but I'll post the amounts and boil times when I get home.

I agree. I made the Hoegaarden clone in Papazian's book and the coriander definitely was the prominent flavor. I don't remember the amount used, but I would cut it in half at least and probably double the orange peel.

I use coriander in my Belgian Wit, and I never go over an ounce for a 5 gallon batch. It is very strong stuff.

I have a Blue Moon clone in the 2ndary and will be bottling this weekend. The recipe called for .5 oz bitter orange peel and .75 oz of coriander crushed at the last 5 min boil along with the hops. I didn't bag the Saaz hops, orange peel and coriander. Nor did I strain them out when I put it into the primary. When racked to 2ndary I tried a little taste and was pleased. Looking forward to when the beer has been bottled for a couple of weeks.

I made a blonde with both coriander and the dried peel from a tangelo. I used 1 tsp of coriander and addit and the peel in the last 5 minutes of the boil. It gave a nice subtle taste...not too strong but you could tell it was there. Nice and balanced.

From what I've seen, I agree with the about .5 Oz of each for a 5 G batch at the end of the boil. You can adjust for taste on subsequent batches, but I'd keep it a little low on the first try.
There are hundreds of recipes out there, just google for home brew recipes. Coriander and bitter orange peel are the classic ingrediants for a Belgian Wit beer, so look for that style.
