Well, today I brewed my very first witbier. Really, this beer is a 5-gallon starter (for the imperial witbier I plan to brew next week, OG should be in the 1.120 range). I was pleasantly surprised to have no issues sparging the mash, but after all a pound of rice hulls does help out a bit. I mashed at 152°F for about 90 minutes. The original plan was to boil for 75 minutes total, but things came up and the spice addition was delayed a bit, so I kept on boiling for an additional 10 minutes.

The third of a vanilla bean being added to secondary is sort of a "why the hell not" type of thing. Vanilla is mentioned in the BJCP style definition (although I grant that it probably isnt actually added for most beers that exhibit the flavor), so I thought I'd go for just a hint of it. The wildflower honey was added at flameout. Today's brewing session was virtually incident free, and I'm happy about that. Also, this was my first time using a Thrumometer, and I was very happy to have it.
