I have always wanted to brew this beer, but never had the courage to do so. I was recently blessed with a particulary great deal ($20 per 25kg) on some quality malt that has been discontinued by my LHBS so I figured I would give it a shot.

The recipe is an adapted version of "140 Schilling Edinburgh Ale" from Greg Noonan's Scotch Ale. The original recipe calls for a final gravity of 1.055 and 60 IBU's which is a bit too thick for my taste (especially @ 10+ gallons). I'm aiming for a FG of 1.035 and 45 IBU's. Half of this will be consumed during this Thanksgiving and the other half will wait until the first Highland games of the season next year.

yeah, at 55lbs of malt that's an OG of about 1.111 as I figure it.

I think he mean 9.25 lbs, not 49.25! lol

... ok, yeah, reading again he meant 55lbs of grain... with a FG of 1.035... not OG! wow!

Now that's the whole idea. I will actually mash it in 2 MLTs. The original recipe has an OG target of 1.125, but I would have to sparge forever to hit 75% eff and then I would have to boil another forever to evaporate that much wort.
