View Full Version : Overachieving Wyeast packet

It's Thursday, and I can't brew till Sunday. I smacked my three-month-old American Ale Wyeast pack this evening, and it is ALREADY swelling. If I pitch to a culture tomorrow, it will be perfect by ... Saturday.
If I stick it in the fridge, will it calm down some w/o harm? Never had one go with such gusto before.
Suggestions to slow it down? Much obliged ...

I would go ahead and make your starter as planned. It will not hurt the yeast at all if your brew day is a day or so later than you want it to be, in regards to your yeast starter being at its optimum. Just brew Sunday & pitch your starter---it may not be actively fermenting anymore, but it'll reactivate itself when you pitch the whole thing into your wort. All you might have is a little longer lag time, but you'll be allright. I would not put it in the fridge.
