I am looking for a killer chili recipe to go with a IIPA for a BBQ I will be hosting on my birthday in July. I am willing to sink as much time and as much dough into the project as necessary. I am looking for something a bit fiery but not blow your doors off. I realize "spicy" is a relative term, so I am looking for jalepeno and not habenaro heat (altough I am not against using habaneros if they are in the right proportion). Other than that the floor is open.

Look at my Porter Chilerecipe I posted back in November. Deco Juicer seems to have liked it, and if it sounds too hot cut back on the chilies. Down here where I live nobody has ever admittted to having chile too hot.

But I'd leave out the pequins if you're not used to spicy chile. the procedure is more what matters-you don't want the skins in your food, they just add bitterness(astringency).

put enough heat into it and you'll get ASS-tringency the next morning.

This is a great recipe. But take a little bit of advice from a guy that found out the hard way. First, put on some type of latex glove when you are working with the chilis from the soak water. Second, wash your hands WELL before you piss.
