I screwed up last night and bottled a batch, that in hind sight I don't think was quite ready. The OG was 1.050 and the gravity at bottling was 1.015, the secondary was showing some "very" small bubbles at the rim of the beer and the secondary glass.

It had been in the secondary 5 days, I knew I should have left it for another few days, oh well, a lesson learned I guess.


So what is the best way to proceed at this point?, let it sit at room temp for a few days to carbonate then place them in the fridge to prevent the bottles from potentially exploding?.

Will it age when cooled? (it's an Ale)

I doubt you have much to worry about. Being at a 1.015 after primary and then 5 days secondary (unless primary was very short) should leave you ok. Most you have to worry about is a beer with a little extra carbonation (could create a gusher so watch it). Being at a 1.015 from a 1.050 gives about a 70% attenuation rate which is right about most ale strains which would IMHO would mean that the majority if your fermentables have been fermented.

I would follow the procedure you normally follow at this point for bottle conditioning followed by cold conditioning at 40-45 if you have the ability.

Ditto what Brewmonkey said. You may also get a little more sediment than if you let it sit longer.
