Well I checked the Gravity today (1.011) and transfered it over to secondary. I drank a little bit out of the hydrometer flask, I think I have created a monster. Bitter, but not tounge splitting as I expected, this is more than likely do to the Low Cohumulone of the simcoe hops. The Amarillo hop flavor and aroma are present and are nicely balanced by the residule sweetness left by the Molasses.
Granted it is still a bit grassy, but once aged out and carbonated this should be a stellar beer. I will try and update it as it comes along.

Update:

Well I had to throw this stuff out due to a bacterial infection.

I took a Hydrometer reading because it wasn't acting right after a week in secondary (it had gunky floatys and there was a lacy heat on it and didn't smell right) It tasted horrible and with the amount of bittering hops in it, it should have had a lot of bitterness. Well the sample had no bitterness and a cidery/vinegery flavor to it.

So my next brew session will have to wait until next month when I buy some more yeast.
Next up, an APA.

I'm going to have to figure out where my sanitation problem is.

I think I narrowed it down to my colander that i used to strain my hops..

Everything else was sanitized with in an inch of it's life.

It's stainless steel, so next time I'll put it in the oven and sterilize it.
