Hey-

A friend of mine is seeking advice on the following recipe:


Imperial IPA

US Pale 2-Row 3#
6 Row 1#
Malted White Wheat ¾ #
Belgian Carapils 1.5#
Crystal 40L .5#
Pale Malt LME 6.6#
Light DME 2#

Columbus 1 oz 90 min
Chinook 1 oz 90 min
Centennial ½ 45 min
Cascade ½ 30 min
Cascade (Dry Hop) 1.5 oz
Columbus (Dry Hop) 1 oz

Steep grains @ 152 F for 60 min, raise temp to 165 F, rinse and discard grains. Bring to a boil following above hop schedule. Etc…


Since I rarely ever use LME or DME I'm not sure what to make of it? My Promash is not available at the moment but my first reaction is that it might need more late addition hops. Any thoughts would be greatly appreciated!

More late addition hops for sure, but also you might want to cut those 90 minute additions down....they will make for some extrodinary bitterness. Also, you might chabge the carapils to a light crystal, melanodin, a bit more ewheat, or a combination of the three.

If it were mine, I'd lower the carapils to .5-.75 lb, I wouldn't lower the 90 min addition of hops though. Yes, it will be bitter, but it looks good to me. I do agree also that more late additions are in order, Centennial at 15 min, about 1 oz and then add .5 oz of Centennial to the dry hops and IMO it will be outstanding!

It just occured to me to ask why you are using 6 row in this, no reason, replace it with 2 row

I ran this through beer smith, and using the recipe that you posted, you can expect an O.G. of around 1.092, you'll probably get a F.G. of about 1.015, putting the ABV just north of 10%.

you IBUs show to be about 110, using stock values, and assuming a full wort boil. if you are boil a partial boil, I'd knock it back to about 100 IBU.

Regardless, you need more late kettle additions, espicially for an IIPA, which will drive up the IBUs more, so you may want to re-evaluate how you are doing all the hopping.

Given that you are striking out on your own, you really should get a copy of beersmith or promash so that you can formulate with out playing alchemist. add a www and a .com to eahc one of those name, and you can download fully functioning demos of either one. I use beersmith, but try both, and use what you like.

Max style guildlines are 1.095 for the gravity and 110 IBU, if you are curious.
