What are your preferences for pizza and beer pairings? For me I tend to like a dark beer with deep crust pizzas and lighter beers and beverages for lighter pizzas. I guess both go along with your taste mood at the time. When I'm in hearty mood I might indulge in a deep dish pizza with a Genuius. Maybe some people do just the opposite in having a light beer if they are eating a deep crust.

Nice fretlessman! Now, why have you abandoned our Broncos for the Hawks? Then again at least the Hawks made the big dance. Broncos frustrated me again this year.

I find that SA Lager or Ale works very well with most pizza. I made some pizza from scratch (ie, I made the dough and the sauce) and I was a little disappointed that all I had to pair with it was SA, but I was pleasantly surprised.

OUR Broncos? You can have 'em. Been a 'Hawks fan for 22 years. :) Would have been nice to see a SeaDogs/Donkeys SB XL, though.

mmmm...being from Milwaukee, I love the thin cracker crust. Lakefront Eastside Dark, Klisch Pilsner, Sprecher Amber would go wonderfully with Mama Mia's or Balistreri's.
Or how about Neapolitan? I've had Surly's Bender (you Twin Cities beer folks will know it) with a margherita Neapolitan and it was wonderful.

Favorite pizza place on the east side of town has Guinness and hacker-Pschorr on tap, I tend toward the HP. Favorite pizza place on the west side of town only has Sam Adams (as a good choice) on tap, goes very well - as Hogie points out. One favorite pizza place in the city makes their own beer and has great guest micros on tap - how kin you beat that?

For me it's a nice light neapolitan crust with an ale. All I want on the pizza is maybe artichoke hearts and tomato, keeping it thin and light. I hada Cutthroat last night, hit the spot.

On the note of Sam Adams has anyone tried their chocalate beer? I don't even know what it's called but they featured it on a Foodtv show tonight. I guess it's been around since 2004 but I had never heard about it.

search for chocolate bock... there's a thread (or three) here somewhere.

I've had it - twice. Loved it both times, but you better like chocolate a LOT if you're going to have this. It's not for everybody, and I'd even say I'm in the minority for liking it. It is VERY chocolaty... more so than Young's, more so than Brooklyn. Be Prepared. :)

They were suggesting using as a substitute for root beer in a float. Is it that "chocolatey" that you could do that? Never had any sort of beer or beer relative with ice cream so I have no idea how that would taste. Then again, beer, chocolate and ice cream - count me in!

It's a little on the pricey side for making floats with - it goes for about $15 for a 750ml bottle. However, the idea of ice cream and beer is not new at all - my local brewpub regularly serves a Stout Float that is fantastic!

OK so I have a new pizza "brewing" this weekend.
I'm going with a Carolina Style Pulled Pork Grilled Pizza. If you have ever had a carolina style pulled pork sandwich this might make sense. It's smoked pulled pork, drizzled with your fav bbq sauce then topped with cole slaw and the top bun. In this cause I will smoke the pork ahead of time. Then top the neopalitan crust with bbq sauce and grill it. once it's flipped to side #2 I'll add the pork, red onions and mozzarella. Before serving I'll top it with the slaw for crunch! I'll try and take pics.
Hope everyone enjoys their weekend!

We have a great pizza restaurant in DC. Pizza Paradiso. Many taps with excellent beers and also a cask or two. The pizza is exceptional and they handle the beers well and the wait staff are trained about each beer. even when a new one goes on they are rounded up, given a sample and description. Excellent Service, Food and beers. It does not get much better.

My wife and I are making a pizza tonight - I make the dough and the sauce, she puts it together and chooses the toppings. I will be pairing it with some homebrew

The homebrew is a Vienna - should work very well

Good Gawd, it only 9:00 am, and I am ready for some pizza and the beer above. What will you smoke the pork with?

I'm hungry as well, can't wait to fire the smoker up tomorrow. I'll most likely use hickory since I still have some on hand. Picked up a pork shoulder last night and made the slaw. The slaw can't have finely chopped cabbage or be too moist. Longer stips of cabbage for the pizza will work much better.
The bbq sause I use is one that one that a friend makes and sells - Phamous Phloyds. I actually sell it one one of my cooking sites. I don't want to pimp my site here. If you want to know where to get it just PM me. Anyway it's the best bbq sauce I've ever had and will work really well for this pizza.
The down side to this pizza is that it won't make for great leftovers. It would just be hard to reheat allow it will probably taste great cold. If it's tasty there may not be leftovers anyway!

Hmmm....Do you have access to mesquite?:) Tasty, tasty stuff.
I take it that you are probably on the east coast? Is the Phamous Phloyds a Carolina style sauce?
At any rate, post your pictures and instructions.

I actually always have hickory, mesquite and cherry wood on hand. I wasn't able to make the pizza last night due to problems with the dough - um, ran out of flour. I like to use Caputo Tipo 00 flour which is an Italian flour but it turns out the cupboard was bare. I should have some more by today or tomorrow. The pork was smoked yesterday(Sunday) using cherry wood. I went ahead and made a carolina style pulled pork sandwhich which was very tasty. I'll use the same porked(reheated) for the pizza.
Phamous Phloyds is not really a Carolina style sauce simply because it does not contain mustard. It might be considered more of a Memphis style. Neither of us live on the east coast - both of us live in Colorado.
I'll definately take pictures! Just have to try and not eat all the pork between now and then. :-)
