I Just tried my first batch of a trappist ale I made. I added about 18 oz of white birch honey from a local apiary. I am disappointed at this point because my beer has very high esters, like someone blended a batch of bananas in my carboy. Its not what I was expecting. I recentl read fermenting belgian beers at anything over 60 degrees will add heavy ester flavors to the batch . So beware of this and don't let it happen to you. It is still very drinkable but definately not what was expected. Who knows maybe time will mellow it out a bit. I can only hope? Does anyone know bout that?
