Any bottles of our previous batches?
I have a six, from each batch I've brewed - granted it only been 4 batches.

I don't know why. I can't be the only sentimental sap out of the bunch!

I usually keep a couple of bottles from each batch and let them age out to 4-5 months. (The rest is usually gone in 2-3 months easy, less if I have friends over) Eventually, I'll need a "celebration/special occation" beer and I'll break one open. It's interesting to see how the flavor profile changes over time.

i always keep one from each batch, just to have not always to drink, but i try to save more if it is a batch that i know will age well. i have a double bock that is 8 months old and is fantastic, far and away my best batch, i just wish i had saved more!

I have saved about 18 bottles each of an English Strong Ale (6.5% abv) and a Belgain Strong Dark Ale (8.5% abv) that I brewed last fall. Tried the Belgian a couple weeks ago and man did it smooth out...really ate up a lot of the alcohol taste. As for the English ale, to which I added 1 lb. of treacle in the recipe, it has smoothed out, too, but it is soooo damn rich...not the type of brew to consume at the end of July. I now have an 8% Scotch Ale in 2ndary now that I know I will save a bunch of 'til next fall (2004). As for my regular strength brews, they never last long enough at my house to save!!

*Months*? A keg of beer doesn't usually last more than three weeks at my place. The double chocolate stout has been in the fridge for a couple of months, but only because I can't drink more than a glass of it per week. Too much like birthday cake.

I can't wait to get myself a house. Right now I live in a two bedroom apt with my girl. I(homebrewing) have takin over the second room. I can't even find a good spot for a second fridge none the less have room to cellar beers for a year. I pretty much bottle a batch and start a new one. Seems to work out perfect, just as I'm running out, the next one is ready. I kinda get tired of only one kinda beer for a month and a half, with the exception of what I pick up at the store. I already told my girl she can decorate the whole house but the basement(manditory) is mine!!

Yeah, you really need some serious storage space for this hobby!!

I tried to keep some from my previous batches, but it didn't last very long...I guess I just don't have the paitence, or self control, one or the other.

Toney..

My Double chocolate stout turned out great! Not too sweet, the chocolate is more of an aftertaste than anything else, It's fantastic!!! and almost gone.....

I sympathize with no room. Last year when we were renting we started a batch of Brown Ale in the spare bedroom. The tub cracked at the bottom and leaked our lovely ale all over the hardwood floors. We bought a house in Oct., and I KNOW the selling point for my husband was the basement "Think of all the beer we can brew!" He cried. I got my house, he got his brewery, and everyone is happy! (me doubly so - house AND beer!)

I try to keep some of what I bottle around for as long as I can stand, sampling one every few weeks or so. I keg most of what I brew so it's usually only around for a month to a month and a half. At the present time there is about 12 of a batch I bottled in April and 12, 12 oz'ers and 3, 22oz'ers from another that was bottled in May.
