I have finally formulated a recipe completely on my own. In the past I have taken other recipes tweaked them to my own tastes. This one is a pretty basic brown ale with a slight twist. In the last part of the boil, I am going to be adding some buckwheat honey. I found it at a farmer's market and thought it would be interesting to try.
I am a bit nervous doing this. I keep saying to myself, "what if it totally sucks?". I'd hate to get to the end of this and not like it.

If you get to the end, and it is not as good as you hoped, send it to my house.

I would find a recipe that has honey in it and use it as a guide line for cooking.
Then it's only down to flavor. I heard you should reduce grains if you use honey or something to that effect.
Good Luck!

chances are it will be great. you have brewed enough to figure out what makes a good beer. There is nothing like drinking a beer that you made from start to finish. Grats!!

I love using my own recipes. After you soak in enough info(and brew enough) you know how to make a good beer - it becomes almost instinctive. Go with it ;)

Brewed it up last night. Tasted the sample from the og reading. Mmmmmm! I am going to have a hard time waiting for this one. The buckwheat honey really comes thru in the flavor.
