I got my holiday beer going last night.
nutmeg, ginger, orange peel, and cinnamon....
some honey, and Amber extract, combination of specialty grains.
oh, and lots of hops. and a bit of maltose-dextrine
Should be ready by Thanksgiving!

I have one brewing as well, Yamaha. Brewed an all-grain Scotch Ale on Thursday with an OG of 1.078. Just took a gravity reading today and it's down to 1.017---a little drier than I would have liked, but its waayyyy green. I will rack it to 2ndary for a couple weeks this Thursday. I figure the gravity will go down another point or 2, like my brews usually do in the 2ndary. ABV will be 8% if this happens (it's 7.8% now, which is fine with me). I will try to exercise restraint when I bottle this at the end of this month & try to let it age 'til Thanksgiving. Your birthday's in Sept., eh???? (Read from a previous post). lol

you might want to use the little bottles for that one! sounds awefully good!

You are right Yamaha. I'll have to decide what mine is and get to it. Perhaps my barelywine will be ready by then. I don't think I can hit the holiday that is your BDAY. MY wife likes big beers so the holiday one or two are fun to do.

I usually do an oatmeal or Imperial stout. I'll get these going in the next 30 days. I shoot for a Christmas release on it and usually have some left as late as March. I am going to be doing 2-3 batches (15 gal.) of whichever one I make this year.

Got my imperial stout in secondary with about another week and a half till I bottle it. I'm not really too concerned about it for the holidays since I'm in a world of my own with the brewing thing and no one I know really cares. I could bring some 6 month imprial stout and some coors light and and that would go would be the coors. Oh well, I guess I'll have to drink it all myself!!!!
Oh yeah, any suggestions on if i should dry hop a bit for the last week and a half. I was thinking about it but just don't want to regret not leaving it alone. If it ain't broke, don't fix it, right?
I just got my first batch in the bottles this last weekend, and am looking for something do for my second batch. After reading this post, I am quite intrigued.
I only do extract recipes at the moment, but does anybody have a good holidy recipe, or know a good place to look for one?

I am thinking about doing a gingerbread ale. Getting a base nut brown recipe and adding gingerbread spices to it. Can you put vanilla in beer?

You sure can! I made a vanilla porter for last year's October Party that was soooo good.

Scotch Ale for me too! The kit (Northern Brewer, extract) just came a few minutes ago, you would have thought there was a cinder block in the box. Unfortunatly, It may be two or three weeks until I have a chance to brew:(

i think i'm going to try a cranberry wheat after my pumpkin ale, and maybe a spiced porter for xmas...
